Oversees food quality, preparation and execution for dining site with an emphasis in Bakery; coordinates and participates in activities of Assistant Chef's and Line Cooks, and other kitchen personnel engaged in preparation and baking of food in dining unit; responsible for food production; trains food service staff in production and preparation & garnishing and decorating techniques; enforces high quality standards; supervises and participates in production team for dining unit in order to complete production orders; can meet deadlines; assumes responsibility for sanitation plan and procedures in accordance with HACCP and all applicable food codes and practices; assists Unit Chef and Executive Chef with menu forecasting, item creation, and purchasing; performs at special functions and events outside of dining unit; acts as primary culinary manager in absence of the Unit Chef.

Degree or combination of culinary experience and education; three years of documented experience in pastry arts; experience in kitchen management and food production; five years of documented supervisory experience in a culinary profession; experience in high volume catering or restaurant; knowledge of Serve Safe or similar food safety programs; four years of experience with HACCP principals; ability to read and interpret recipes, safety rules, operating instructions, and procedure manuals; ability to write routine reports and correspondence; ability to speak effectively to customers or employees; must be able to lift and/or move up to 20 pounds regularly and up to 50 pounds frequently.
ACF, Pro Chef, or Pastry Arts Certification; experience supervising classified civil service, unionized labor force, and students; experience with C-bord or other similar menu management system.
Target Salary: $48,000.00 - $57,000.00 Annually
