Director of Food and Nutrition Services
Reporting to the Chief Operating Officer, The Director of Food and Nutrition Services is responsible for organizing, directing and coordinating the activities associated with meeting the nutritional needs of patients (including menu development, food preparation, food distribution, food storage, and sanitation) and cafeteria services for staff and visitors at the Hinsdale and Chicago campuses of RML Specialty Hospital.
The Director develops and implements clinical nutrition care policies and guidelines to provide optimal nutritional care of the patients, and ensures all care is age and developmentally appropriate for adult, geriatric, and long-term acute care patients.
The Director manages all operational and financial aspects of the department, ensuring attainment of budget goals and adherence to Joint Commission and Public Health Standards. Supervises FNS Manager, FNS Supervisor, Registered Dietitians, and FNS Staff (Cooks and Attendants).

Analytical ability to solve comlex operational problems, maintain operational and sanitation records, maintain inventory, develop budget, monitor for and correct budget variances, and perform financial analysis.
Interpersonal skills to interact with various levels of hospital personnel and communicate with vendors.
Supervisory skills to schedule, direct, and improve the activities of service staff and clinical staff.
Clinical skills to assess nutritional needs of patients, prescribe appropriate diets, and adjust therapy when needed.
Preferred: Quality improvement training and experience
Knowledge & Experience -
Bachelor's degree in Food and Nutrition
Five years of clinical experience in nutrition support of critical care patients.
Five years of progressive food service management in the health care industry.
Master's degree in Clinical Dietetics or Business/Management
If candidate has a Master's degree in Clinical Dietetics, only three years of clinical experience in nutrition support of critical care patients is required.
If candidate has a Master's degree in Business/Management, only three years of progressive food services management in the health care industry is required, preferably in a hospital.
Registered by American Dietetic Association
Licensed by the Illinois Department of Financial and Professional Regulation (IDFPR)
Working Conditions -
Primarily in an office and kitchen environment. May be exposed to slippery floors, knives, heat from food preparation equipment, and cleaning/sanitation chemicals.
