Rutgers, The State University of New Jersey, is seeking a Sous Chef for Dining Services.
Among the key duties of this position are the following: Reports to a Chef Manager, depending on unit assignment, supervises food production; ensuring that all food is produced in a timely manner to meet needs, and is presented in an attractive and appealing style. Responsible for over sight of kitchen personnel in the production of hot and cold food, in the cleaning of food preparation areas, and in the control of food costs. Responsibilities also include the over sight of meal service, set up, upkeep and effective sanitation of all service areas, assisting with production planning and inventory; and the successful execution of catered events. Trains, assigns and motivates employees as needed to ensure a smooth-running operation. May be assigned to other related duties and special projects as needed.
Minimum Education and Experience:
Requires a high school/vocational school education or an equivalent combination of education and/or experience, and a minimum of four years of high volume food service experience. Also requires ServSafe certification, or certification within one year of employment, good communication skills and computer literacy in industry standard software. Must be able to read and follow standardized recipes and production worksheets. Must pass Food Handler's Certification.
Prefers a degree in culinary arts.
Utilizes industrial kitchen equipment and FoodPro proprietary food production, planning and control system.
