Campus Dining at Iowa State University is seeking applicants for two newly created Chef Manager positions at our two largest residential food service facilities: Union Drive Marketplace and Seasons Marketplace.
The Chef Managers will assist the Sous Chef and production staff in their facility and direct culinary operations to ensure high quality, safe, and cost-efficient production and service is ensured for students, staff, and university guests. They will demonstrate a high level of food and production knowledge and will be able to convey that to staff through proper training and guidance. Chef Managers will participate in and supervise food ordering, food production, service, catering events, sanitation, and housekeeping/facilities maintenance. They will work with the Unit Manager in administering all Human Resource responsibilities, safety and sanitation, budgeting, sales and financial targets; and making department decisions regarding policies and procedures. Chef Managers will work with the Chef de Cuisine on menu and recipe development.
The successful candidates candidates will have excellent leadership skills and comprehensive knowledge of food, along with the ability to plan for large volume production.
Required Education and Experience:
Bachelor’s degree and 4 years of related experience; OR a Master’s degree and 2 years of related experience; OR a combination of education and/or related experience totaling 8 years unless otherwise specified under supplemental required education and experience. Experience must be at a comparable level and directly related to the duties of this position.
Preferred Education and Experience:
Degree in Culinary Arts, Food and Nutrition, or similar.
Experience managing food service production and culinary operations in high volume college or similar environment.
Experience planning, coordinating, and overseeing food service training.
Experience researching, developing, and implementing menu items in a large volume food environment.
Experience with food service budgeting, Including managing food and labor costs.
Experience with food service software systems, such as CBORD or similar.
The position requires extensive work that may exceed 40 hours per week and happen during non-standard work time: before 8 a.m., after 5 p.m., and on weekends.
